Common in Eastern European cuisines, beet kvass is enjoyed as a healthy beverage and as an ingredient in soups and other favorite foods.  Use it in place of vinegar in salad dressings, or drink a couple of ounces daily as a tonic or pick-me-up.

Beets arebeet rich in folate, potassium, manganese, and vitamin C.  When making kvass, the beets are kept raw so that their minerally-rich, root-y goodness becomes infused in the brine.  We include aromatic spices like ginger, allspice, bay, and black pepper for flavor and their tonic properties.  Curious Farm Beet Kvass is vegan, and we use much less salt than other recipes.
